Cooking Direction (4 servings): Heat 1 cup of coconut milk (240 ml) together with 50g (or 3 tablespoons) of the curry paste and stir-fry until oil appears on top. Add 250g of sliced beef or chicken and stir-fry until done. Add 1 cup (240 ml) water and bring to boil. Add some eggplant, cherry tomatoes, sweet basil and chilli. Cook until tender. Add fish sauce to taste. Serve with cooked rice. Tipp: For tastier, creamier and thicker curry, substityte water for coconut milk or milk.
