Heat 240 ml (1 cup) coconut milk together with 50g (or 3 tablespoons) of the curry paste and stir-fry until oil appears on top. Add 250g of sliced beef or chicken and stir-fry until done. Add 240 ml (1 cup) water and bring to the boil. Add some eggplants, sweet basil leaves, kaffir lime. Tip: For tastier, creamier and thicker curry, substitute water for coconut milk or milk.
